Over six years ago, we visited a few friends who brewed beer at a small house-like structure out in Epalinges. We had to duck our heads at certain places in the house, and we vividly remember having to climb a ladder to see where the magic happened. These friends, though they started at very humble beginnings, have evolved, expanded, and blossomed into a nationally renown brewery called Docteur Gab’s, and have now opened up their first brick-and-mortar gastropub right here in Lausanne. Friends, please help us welcome Gab’s Lab to the neighborhood.
Situated on the infamous Rue du Bourg, Gab’s Lab boasts one of the best views of our Notre Dame from their back dining area. Offering a full lunch and dinner menu, as well as a snack and apero menu, it’s not just about the beer (though many of the dishes creatively incorporate the beer and cider). They’ve obviously included a complete selection of Docteur Gab’s beers on tap, as well as inventive concoctions which change regularly (made in glass beakers no less!)
The interior is minimalist rough-luxe–with plenty of wood and metal accents, plus a mix of midcentury as well as antique furniture. Though it seems small from the outside, the length of the building plus the upstairs ensures there’s always space for you and your crew.
The menu was well curated and creative–crispy pork belly, beef pies, falafel, hummus, and even oysters–many dishes incorporating their beer and cider in delicious and playful ways. Though the dishes were tasty, we did find the price-points just a tad high; our soup and sandwich combo was 28 francs.
Whether you’re looking for a special place to have lunch or dinner, or just a scenic spot to grab a drink and small plates with friends, Gab’s Lab is definitely worth checking out–cheers!
